In 90s the beef consumers wanted less fat in there beef. In 2000 they said the beef was to lean and wanted more marble.
In todays consumers they want to see more Omega-3.
Highland beef has less back fat and more Omega-3 than a lot other breeds.
Now producers are crossing the Highland cattle with Hereford and Angus cattle to get the benefits of the highland cattle and the taste and marbling of the Hereford and Angus cattle that everone loves
We have a small heard of Highland cattle . We do only quality not quantity.
I have a 8 mouth old and a yearling heifers out of Prince Archibald for sale at this time .
We had 3 heifers that went to St.Louis Missouri and a Bull that went to eastern Kansas this last year.
